This Summertime classic gets its kick from rum, and its sweetness from fresh mint leaves. Originating in Cuba, the Mojito was a favorite of writer Ernest Hemingway.

To make a proper Mojito,

* Add 3 sprigs fresh mint and 1 wedge of lime to a sturdy Tom Collins glass

* Crush with a muddler, and then add 2 teaspoons sugar along with 2 more lime wedges and continue muddlin'

* Fill glass generously with ice. Add 1.5 oz. white rum, then top off with club soda.

* Add sugar to taste, and garnish with another lime wedge.
